Isovaleric Acid (CAS No: 503-74-2), also known as 3-methylbutanoic acid, is a clear colorless to slightly yellow liquid with a strong, pungent, cheesy, and sweaty odor. It is a branched-chain short-chain fatty acid naturally present in foods like cheese, soy milk, and apple juice, and widely used as a flavoring agent, fragrance ingredient, and chemical intermediate.
